I am in the same boat! So many allergies!!! It's miserable, but yes, you have to get creative with the foods you can eat so it's less miserable and overwhelming. Eat fresh because everything in the store has everything you can't eat all in one package.

Cooking vegetables often deactivates them. If I even peel a carrot, I get hives on my hands, and, of course, I can’t eat them raw. But if they are cooked or added to a stew or soup, I don’t react.

My list of foods I can eat is so small. Just get fed up with same all the time.

It isn't easy and you end up cooking your own meals to be safe. Start making a list of the foods you can eat. It may take a while to figure out recipes using safe foods. Experiment, add seasonings you can use. You may end up with some weird combinations but that's ok. Write down your successes for future menus. If you can, put some meals in the freezer for those days you don't have energy/time to cook.
